I make this dish all the time. It is always a hit and is virtually impossible to mess up. I always get tons of compliments on the dish and when I give people the recipe, they always say is that it? Really, its super easy and tastes great. Also, I am giving you the recipe for the original version but this is definitely one of those recipes where you can use any vegetables that you want, any type of pasta that you want and any type of salad dressing that you like. Its definitely a versatile dish.
- 3 medium tomatoes
- 1 large cucumber
- 1 large red onion
- 1 packet of dry italian dressing (I use Zesty Italian)
- 1 bottle of italian dressing of your choice
- 1/2 C parmesan cheese
- 1 lb. spaghetti (or the pasta of your choice)
- Boil the pasta according to the directions on the package. While the pasta is boiling, dice the vegetables. They should all be the same size. Once the pasta is finished, let it cool slightly but not completely. In a large bowl, mix the pasta, vegetables, 1/2 of the italian dressing packet, 1/2 of the parmesan cheese and a couple of generous squeezes of the dressing. Mix all of the ingredients together and taste. Continue to add the dry seasoning mix, parmesan cheese, and italian dressing in increments until it tastes just like you want it. The pasta should be well coated with the dressing. Also add black pepper to taste.
